We have a breeding program specifically focused on the eating quality of the meat.  Sounds obvious – what all farmer do –  right?  In fact it’s very rare. Meat processors don’t pay farmers for eating quality – so eating traits are not really part of the beef farming psyche in New Zealand, which is disappointing.  We DO care about the taste and breed accordingly.

Meat processors don’t pay farmers for eating quality – so eating traits are not really part of the beef farming psyche in New Zealand, which is disappointing.  We DO care about the taste and breed accordingly. We don’t simply buy in cattle to fatten. Almost all animals used in our beef program are born on our property, and bred to meet the highest genetic levels for tenderness, marbling, eye muscle areas, carcass quality, and docility.

In 2009 Lake Farm was Grand Champion Brand in NZ Beef and lamb’s prestigious “Steak of Origin” competition, for the best steak in the country. We are, naturally, pretty proud of to have achieved this!

In each year’s Steak of Origin contest NZ Beef and Lamb test all entries for tenderness – and the top 20% go through to the semi finals. Since 2009 we have reached the semi finals in all but one occasion. This rates us in the top 20% of the very best cattle in New Zealand.  From there a panels of chefs and food writers then select the final 20 steaks to make the finals.  In four out of the last 6 years we have made the final 20. Considering our artisan size – we are proud of this!  Actually, in last year’s final two of the 20 came from our small farm.  This year, 2014, we got three out of our four entries into the semi finals – and our last guy, Haki – went on to win Best of British Section (he was a purebred Angus) and then to take out the very top prize – Supreme Grand Champion.  It was very humbling. But now we can surely say that our beef is award winning!

Our registered Angus stud (Lake Farm Angus), is continuously developing the highest quality purebred Angus cattle – for both stud and commercial use. We also run a cross breeding program using our Angus cattle crossed with Japanese Wagyu (supreme marbling) and Italian Piedmontese (genetic tenderness and healthiness – less cholesterol than fish).
